


For the best fruit daiquiris use a quality purée or fresh fruit, there are hundreds of fruit flavours and combinations that work with rum, experiment with flavours and try combining fruit flavours with spices and herbs. The sweet and savoury flavours combine really well in this drink with aged rum.
Glass: 10 oz rocks or 5 oz Martini
Method: shake & strain
50ml Aged rum
12.5ml lime juice
12.5ml Funkin Strawberry fruit purée, 10 ml liqueur, or muddled fresh fruit
Dash of Balsamic vinegar
1 barspoon of sugar syrup
Put all the ingredients into a mixing glass and fill with ice. Cap with a Boston shaker and shake vigorously until the shaker freezes on the outside. Strain either over ice in a rocks glass or fine strain straight up into a chilled cocktail glass.
Garnish with half a strawberry and a drizzle of balsamic reduction.
To make your own balsamic reduction simple add a quality aged balsamic vinegar to a pan and heat, add Demerara sugar, continuously stirring and simmer until the liquid has reduced to a syrupy thick liquid. Add one bar spoon of Demerara sugar to every 25ml of Balsamic vinegar.
