"Making a dilicious drink from a selection of spirits and mixers is an art worth learning" Experienced BarWomen Emily Colston remembers a few of her favourites.
"I have been to many cocktail courses during my five years (part-time) behind the bar; most of them concentrate on preparing a couple of different cocktails, cobbling together your drinks from a strict list of ingredients. If you really want the art of making cocktails to stick, you have to lay the right foundations - could there be a better place to indulge in mixology"
"Most of the cocktail courses are pretty hands on; some are directed at professionals. some are aimed at the enthusiatic drinkers, others are open to all. The only thing they'll all have in common is they aim to impart the delicate art of mixing drinks"

I’m being a barman with flair
“the next time the man serving you a drink does so with even a hint of theatrics – a cheeky high-pour, say, or a roll of the bottle along a hairy forearm – tip him well because he has “flair” in his soul…
On the cocktail course you’ll learn how drinks have moved on from the smuttily named liqueur combos (remember the Long Slow Comfortable Screw?) and sugary rims of the 1980s. Today a desirable cocktail is all about fresh ingredients and a sensory wallop that appeals as much to eye and nose as to tastebuds. You’ll stir, shake, layer, strain and smash, and you’ll learn the basics about which drinks should never be mixed – like lime cordial and Baileys, for instance.” read more

'you take a cocktail shaker, cold enough to write your name on it, a handful of cherry tomatoes, a good swish of ketel one vodka, and a sprinkling of lee & perrin's. Shake it all about. Strain the resulting concoction into an icy martini glass and garnish prettily with a plump little tomato. It is the colour of unripe watermelon. It tastes like a delicate, rather fragrant bloody mary. This, ladies and gentlemen, is the cherry tomato martini? Sept 2002
